Simple Masala chicken

Serves 2

5 minute prep time, 15 minute cook time

When you’re busy you want dishes that are hearty, filling, quick to make, and with minimum effort and ingredients. Over the weekend I made this very basic chicken masala and was pleasantly surprised.

What you’ll need

4 chicken fillets (I used Asda Farm Stores chicken breast fillet portions

Half brown onion chopped

100ml single cream (I used Alpro fortified oat cream that contains no soya)

100ml boiled water

1tsp garlic powder

1tsp turmeric

1tsp garam masala

Pinch of salt

 

Optional – garnish with coriander leaves

Optional – 1 tsp of curry powder (my body doesn’t seem to like it so I avoid it)

Method

  1. Pre-heat a deep pan with oil. I used olive oil.

  2. Add your chicken and onion and fry for 5 minutes on a high heat. The chicken should be browned and the onions translucent.

  3. Boil your water, turn the fire down, and to the pan add your cream, garlic powder, turmeric, garam masala, salt, and boiled water. Mix and cover for 10 minutes to steam.

Optional - Serve with rice

I used brown basmati for a higher dose of fibre, zinc and B vitamins. Brown basmati rice is also a great alternative to white rice for diabetics, as it has a lower glycaemic index and therefore will not spike sugar levels as quickly as highly processed grains.
