Chinese inspired style chicken breast with slaw

Serves 2

What you’ll need for the chicken:

Two chicken breasts

2 tbsp flour

1 tbsp Chinese five spice

Pinch of salt

1 tsp garlic powder

1 tbsp avocado oil

 

For the slaw:

50g beansprouts

A small piece of red cabbage. About steak with and cut length ways finely

1 stick of spring onion chopped finely

A pinch of coriander leaves chopped finely (3-5 sprigs)

1 deseeded red chilli

1 tbsp of Greek yoghurt

A squeeze of lemon juice from half a lemon

 

Instructions:

1.       Preheat your oven to 170

2.       Take all of your dry ingredients for the chicken and combine them in a bowl

3.       Clean your chicken and pat it down with kitchen towel. The chicken being dry will help the coating crisp up more quickly

4.       Preheat your pan until it’s hot, and then add your oil

5.       While the oil is heating, roll the chicken in the seasoning mix and add them to the pan. Fry on each side for two minutes

6.       Transfer them to an oven tray and leave to cook for 25 minutes

 

Now prep your slaw ingredients and mix them in a large bowl.

Serve this dish with homemade oven chips, rice, or a fresh leafy green salad.

For your chips, peel and cut up two large brown potatoes into chunky chips. Rinse your potatoes and add a pinch of salt, a teaspoon of avocado oil, and half a teaspoon of smoked paprika and bake for 45 minutes. Drying the potatoes and a tiny bit of salt will help them crisp up.
