Fillet steak with noodles

This recipe packs a good hit of protein with a nutrient dense starchy side suitable to many dietary requirements.

Serves 2

What you’ll need:

2 fillet steaks

½ tsp black pepper

100g rice noodles

2 crushed garlic cloves

3 tsp avocado oil

1 sprig of fresh thyme

3 tbsp sriracha sauce

1tbsp honey

½ brown onion chopped

4 sweet baby peppers

150g tender stem broccoli chopped (I used about half way up the stork)

4 large chestnut mushrooms

300ml hot water

Instructions:

1.       First start by marinating your steaks. Add black pepper, crushed garlic, and 2 tsp avocado oil to the steams in a bowl and set to one side

2.       Add 1tsp of avocado oil to a pan and fry off the onion, peppers, broccoli, and mushrooms for 5 minutes in a large pan on a high heat (or a wok, which is what I used)

3.       Now heat another pan, and add your steaks. Cook on each side for 3 minutes on a high heat

4.       While the steaks cook, add sriracha sauce, honey, your hot freshly boiled or heated water to the pan of vegetables, and 100g of rice noodles in that order. Keep the lid off the pan and let the water evaporate while the noodles cook. Stir intermittently while the noodles soften. It will take around 3-4 minutes from adding the noodles

5.       Serve and enjoy
