Vegan creamy white wine pasta

I was in the mood for a little bit of pasta and fancied something meatless. Usually when I make veggie or vegan meals, while I do enjoy them, I feel like something is missing. But not with this. All you need is pasta, tomatoes, mushrooms, vegan cheese, fresh garlic, basil, white wine, and pepper to make a deliciously rich and filling dish. Vitamin C, vitamin D, calcium, and lots of flavour.

 

What you’ll need

½ red onion finely chopped

200g plum tomatoes halved

100g woodland mushrooms chopped

1 tbsp avocado oil

4 cloves crushed garlic

2 tbsp vegan cream cheese (I used violife as it’s soya and dairy free)

1 tsp basil

½ tsp coarse black pepper

200ml hot water

100ml white wine

200g penne pasta (I used Waitrose brand gluten free)

Instructions

1.       Start with prepping your onion, tomatoes, and mushrooms

2.       Preheat your pan on a high heat and add oil. Once hot, add your chopped veg to lightly fry

3.       Add a pinch of salt, four crushed cloves of garlic, 2 tbsp vegan cream cheese, 1 tsp dry basil, and half a spoon of coarse black pepper

4.       Give it a mix and boil up some water. Now add 200ml of hot water and 100ml of white wine

5.       Give the mixture a mix and add your pasta of choice. Stir again and cover for 12 minutes

6.       Stir, serve, and enjoy
